In “The Cheese Nun”, our very own Mother Noella Marcellino takes us on a rare journey from the enclosure of the Abbey to the cheese caves of France as she explores the sights, smells and science of cheese making. Through her particular knowledge as a microbiologist and her love for the ancient craft, she offers a comprehensive view of what it takes to create the rich and complex flavors of individual cheeses, ultimately becoming an international advocate for biodiversity and the preservation of these historic methods. In this 60-minute documentary directed by Pat Thompson, Mother Noella extends our Benedictine centering through her work in the field and with the many people she encounters on this mission, opening the vision of a whole world on the surface of a cheese.
